Loaded Baked Potato Skillet Dip

Indulgent twice-baked potato dip loaded with sour cream, cream cheese, and cheddar served with crispy potato chips. Perfect for parties and easy to make with Betty Crocker™ roasted garlic mashed potatoes, bacon, green onions, and parsley. A crowd-pleasing appetizer for game day and potlucks.
Ingredients:
  • 5 slices bacon, chopped
  • 2 cups water
  • 1 cup milk
  • 2 tablespoons butter
  • 1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potatoes
  • 2 packages (8 oz each) cream cheese, softened and cubed
  • 2 cups shredded cheddar cheese (8 oz)
  • 1 container (8 oz) sour cream
  • 1/2 teaspoon pepper
  • 4 green onions, thinly sliced
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves
  • Potato chips, as desired
Instructions:
  • In a generously coated 12-inch skillet over medium heat, cook the bacon for 7 to 9 minutes until it's crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Keep 2 tablespoons of drippings in the skillet and discard the rest.
  • Combine water, milk, and butter with the drippings in the skillet. Bring to a boil over medium-high heat, then simmer on low. Add potatoes and mix well before removing from heat.
  • Mix the cream cheese until velvety. Add 1 cup of cheddar cheese, sour cream, and pepper. Stir until the cheese is melted.
  • Sprinkle the remaining 1 cup of cheddar cheese, green onions, parsley, and cooked bacon on top. Serve alongside some crispy potato chips.
