Loaded baked potato chicken: Quick one-skillet meal for busy weeknights.
Ingredients:
  • 2 slices bacon
  • 2 skinless chicken breasts
  • 0.5 cup shredded Cheddar cheese
  • 1 cup baby spinach leaves
  • 0.25 cup sour cream
  • 1 tablespoon thinly sliced chives
Instructions:
  • In a nonstick skillet over medium heat, crisp bacon slices by turning occasionally for about 10 minutes. Transfer to a plate to cool, then crumble with your fingers and set aside.
  • Sear chicken breasts in the flavorful bacon grease over medium heat until golden brown, approximately 5 minutes. Flip and continue cooking until chicken is fully cooked and tender, around 5 more minutes. Ensure internal temperature reaches 165°F (74°C) with a thermometer. Season generously with salt and pepper.
  • Place a generous amount of Cheddar cheese on top of each chicken breast and allow it to beautifully melt.
  • 1. Start by layering fresh baby spinach on a beautiful serving plate. Next, elegantly place the succulent chicken on top of the bed of spinach. Finish by generously topping it off with dollops of tangy sour cream, crispy crumbled bacon, and aromatic chives for a burst of flavor.
