Create a satisfying meal with a customizable loaded baked potato - a must-have addition to your dinner rotation!
Ingredients:
  • 6 russet potatoes
  • 12 strips bacon
  • 1 pound broccoli florets
  • 0.75 cup diced red bell pepper
  • 0.5 cup water
  • 1 cup sour cream
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 cups grated Cheddar cheese
  • 8 green onions, chopped
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Using a paring knife, make small cuts in each potato and bake in the oven until soft, approximately 1 hour, adjusting time as needed based on the size of the potatoes.
  • Dice the bacon while the pan heats up over medium heat. Cook the diced bacon in the pan until crispy, approximately 7 minutes. Remove the bacon from the pan and set it aside, keeping the flavorful bacon fat in the pan.
  • Place the saute pan with the flavorful reserved bacon fat back on the heat. Quickly saute broccoli and red pepper for 2 minutes. Pour in water and cook until fully absorbed. Remove from heat and set aside for later.
  • Once the potatoes are cooked, let them cool until you can handle them comfortably. Halve the potatoes and use a spoon to scoop out some of the insides, leaving a 1/4-inch border on the skins.
  • Combine the potato flesh, half of the bacon, broccoli-red pepper mixture, sour cream, salt, pepper, and half of the Cheddar in a bowl.
  • Separate the filling and stuff it back into the potato skins.
  • Place the stuffed potatoes back in the oven and bake for 10 to 12 minutes until they are heated through. When ready, take them out and sprinkle the remaining bacon, Cheddar, and green onions on top.
