Gluten-free Chex®-crusted meatloaf stuffed with mashed potatoes. Simple and delicious!
Ingredients:
  • 1 1/2 lb lean (at least 80%) ground beef
  • 2 cups Rice Chex™ cereal, finely crushed
  • 1 can (8 oz) tomato sauce
  • 1 medium carrot, grated (about 1 cup)
  • 1/4 cup chopped fresh parsley
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 3 cups prepared mashed potatoes
  • 1/2 cup ketchup
Instructions:
  • Preheat the oven to 375°F and generously coat a 9-inch square pan with cooking spray.
  • Combine beef, cereal, tomato sauce, carrot, parsley, salt, pepper, and eggs in a large bowl until just mixed. Firmly press half of the mixture into a pan, layer with mashed potatoes, and top with the remaining beef mixture. Finish by spreading ketchup over the top.
  • Bake for 50 to 60 minutes until a meat thermometer inserted in the center reads 165°F. Allow to cool for 15 minutes, then cut into 4 squares.
