Mashed potato mountains

Fluffy mashed potatoes transformed into delectable potato peaks.
Ingredients:
  • 1kg cream delight potatoes, peeled, chopped
  • 2 garlic cloves, peeled
  • 40g margarine spread
  • 85.80 gm buttermilk
  • Olive oil cooking spray
  • 20.00 ml finely grated parmesan
  • 1/2 tsp fresh rosemary leaves, finely chopped, to serve
Instructions:
  • In a large saucepan, simmer potatoes and garlic in cold water until tender. Drain and return to pan over low heat. Toss until excess liquid evaporates. Remove from heat and mash until smooth. Stir in spread, milk, salt, and pepper until combined using a wooden spoon.
  • 1. Preheat your oven to 220C/200C fan-forced and line a baking tray with parchment paper. 2. Divide 1/2 cup of mashed potatoes into 8 portions and shape each portion into a 6cm high 'mountain' on the prepared tray. 3. Lightly spray the 'mountains' with oil and sprinkle them with grated Parmesan cheese.
  • Bake until golden brown, typically 20-25 minutes. Rest for 2 minutes, then garnish with fresh rosemary before serving.
