Try this quick and delicious twist on a quesadilla - a potato pierogi quesadilla! Customize it with your favorite potato toppings for a satisfying meal in no time using ready-made bacon and mashed potatoes.
Ingredients:
  • 2 cups mashed potatoes
  • 6 slices cooked bacon, crumbled
  • 0.25 cup sliced green onions
  • 8 flour tortillas
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons softened butter
  • 1 cup salsa
  • 0.25 cup sour cream
Instructions:
  • Mix together creamy mashed potatoes, crispy bacon, and fresh green onions. Spread this delicious mixture onto 4 tortillas, leaving a small border around the edges. Sprinkle gooey shredded Cheddar cheese on the mashed potatoes and cover with the remaining tortillas. Gently butter both sides of the quesadilla for a golden, crispy finish.
  • Heat a large skillet over medium heat.
