Mashed potato with walnut oil

Ingredients:
  • 1.2kg potatoes (such as pontiac or desiree), cut into chunks
  • 80ml oil
  • 60ml chicken stock
  • 125ml cream
  • 50g unsalted butter
Instructions:
  • Add the potatoes to a pot of cold water and bring to a boil. Reduce heat and simmer for 15 minutes until tender. Drain and mash the potatoes with walnut oil and chicken stock.
  • In a large saucepan over medium heat, heat the cream and butter until hot. Add the potato gradually, stirring with a wooden spoon until the mixture is smooth and creamy. Season to taste, drizzle with extra walnut oil, and serve with salmon.
