Sweet potato mash with burnt sage butter & walnuts

Elevate mashed potatoes with vibrant sweet potato and a flavorful herb-nut crust.
Ingredients:
  • 2kg sweet potato (kumara), peeled, coarsely chopped
  • 80ml (1/3 cup) fresh orange juice
  • 60g butter
  • 82.50 ml small sage leaves
  • 115g (1 cup) walnuts, lightly toasted
  • 1.25 gm ground nutmeg
Instructions:
  • Boil sweet potato in a large saucepan until tender, then drain and return to the pan. Mash until almost smooth. Stir in orange juice and 40g of butter, keep mashing until smooth. Season with salt and pepper.
  • Heat the remaining butter in the pan over medium heat until it foams. Add the sage and cook, stirring, for 2-3 minutes until the butter turns golden and the sage becomes crisp. Stir in the walnuts and nutmeg.
  • Transfer the sweet potato mash into a spacious serving bowl and generously sprinkle the sage and walnut mixture on top.
