Baked sweet potato mash with crunchy pecan sourdough topping

Unlock the addictive secret to the crispy, sweet topping on this irresistible sweet potato bake.
Ingredients:
  • 800g orange sweet potato, peeled, coarsely chopped
  • 77.55 gm sour cream
  • 50g butter
  • 100g sourdough bread, cut into 2cm pieces
  • 125.00 ml pecans, roughly chopped
  • 54.00 gm maple syrup
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a 7cm-deep, 16cm round (4-cup capacity) ovenproof dish.
  • Boil sweet potato until just tender, about 8 to 10 minutes. Drain and return to the pan. Mix in sour cream and half of the butter. Mash until smooth. Season with salt and pepper to taste.
  • In a small bowl, mix together the sourdough and pecans. In a small heatproof jug, combine the maple syrup and remaining butter. Microwave on HIGH for 20 seconds or until melted. Spoon the mixture into a prepared dish, then sprinkle with the sourdough mixture and drizzle with the maple syrup mixture.
  • Bake until bread is golden and crisp, for about 20 to 25 minutes. Serve and enjoy!
