Fish parcels with spiced sweet potato mash

Quick and delicious family meal ready in 35 minutes, with a side of veggies.
Ingredients:
  • 1 leek, pale section only, cut into matchsticks, washed, dried
  • 2 green zucchini, ends trimmed, cut into matchsticks
  • 1 fennel bulb, ends trimmed, thinly sliced
  • 1 lemon, rind finely grated, sliced
  • Freshly ground black pepper
  • 4 (about 150g each) firm white fish fillets (such as ling or snapper)
  • 3 (about 750g) orange sweet potatoes (kumara), peeled, cut into 3cm pieces
  • 20.60 gm skim milk
  • Pinch of ground cinnamon
Instructions:
  • Preheat your oven to 200°C and cut four 40cm squares from non-stick baking paper.
  • Lay out the leek, zucchini, and fennel on one side of each parchment paper sheet. Sprinkle with lemon zest and season with pepper. Place the fish and lemon slices on top. Fold the paper over to cover the ingredients and seal the edges to make parcels. Transfer the parcels to a baking tray and bake in a preheated oven for 15 minutes, or until the fish is cooked through.
  • Steam the sweet potato until tender, then transfer to a bowl and mash until smooth. Mix in the milk, cinnamon, and salt until well combined.
  • Serve the fish parcels on plates with the sweet potato mash immediately.
