Whip up a quick and delicious Asian fish dinner in no time.
Ingredients:
  • 2 (about 800g) barramundi fillets, cut into 8 portions
  • 42.00 gm fresh lime juice
  • Salt
  • 1 long fresh red chilli, finely chopped
  • 3cm-piece fresh ginger, peeled, thinly sliced
  • 1 stem lemon grass, pale section only, finely chopped
  • 100ml Kara coconut cream
  • 24.40 gm fish sauce
  • Steamed white rice, to serve
  • Lime wedges, to serve
Instructions:
  • Lay the fish in a glass dish, then emphasize with zesty lime juice and a sprinkle of salt.
  • Combine chilli, garlic, ginger, and lemon grass in a mortar. Use a pestle to gently pound into a smooth paste. Mix in coconut cream and fish sauce until fully combined.
  • Gently wipe banana leaves with a damp cloth. Place 2 banana leaves in a large steaming pan over simmering water. Steam for 30 seconds until soft. Arrange banana leaves in a cross shape on a clean surface. Put 2 fish pieces in the middle, top with spice paste. Fold leaves to make a parcel, secure with toothpicks. Repeat with remaining ingredients. Steam fish parcels for 8 minutes until cooked. Serve with steamed rice and lime wedges. Enjoy!
