Ingredients:
  • 3 shallots, trimmed, pale section thinly sliced diagonally, green section cut into thin strips
  • 4 white fish fillets
  • 4cm-piece fresh ginger, cut into thin strips
  • 21.00 gm soy sauce
  • 1 tsp sesame oil
Instructions:
  • Preheat the oven to 200°C, then soak shallot strips in chilled water for 15 minutes in the fridge. Drain before using.
  • Begin by preparing four 40cm squares of baking paper and four 40cm squares of foil. Arrange a paper square over a foil square. Add a fish fillet on top of each. Repeat with the rest of the paper, foil, and fish. Distribute the sliced shallot, ginger, soy sauce, and oil evenly among the fish. Fold to seal the packets. Cook on two baking trays for 15 minutes or until the fish is cooked through.
  • Unwrap the parcels and garnish with delicate shallot curls.
