Steamed fish parcel with jasmine rice and snow peas

Savor flavorful fish parcels with aromatic jasmine rice and crispy snow peas.
Ingredients:
  • 60ml sweet chilli sauce
  • 21.00 gm soy sauce
  • 42.00 gm lime juice
  • 1 clove garlic, crushed
  • 1 tsp finely grated ginger
  • 1 bunch bok choy, trimmed, leaves separated, halved
  • 4 x 180g Deli Frozen Ocean Trout Fillets, thawed, skin removed
  • 2 spring onions, finely sliced diagonally
  • 125.00 ml coriander leaves
  • 1/2 red chilli, thinly sliced
  • Steamed jasmine rice, to serve
  • Steamed snow peas, to serve
Instructions:
  • 1. Preheat your oven to 200C while you prepare 4 sheets of 30cm baking paper on your workspace.
  • In a jug, mix sweet chili sauce, soy sauce, lime juice, garlic, and ginger. Divide bok choy onto baking paper sheets. Place a piece of ocean trout on each. Season with salt and pepper. Sprinkle with spring onion, coriander, and chili. Fold the long sides of the paper together and fold over twice. Fold the ends to seal the parcels. Bake on a large tray for 10-12 minutes until trout flakes easily with a fork.
  • Serve steamed jasmine rice and snow peas on plates. Place the trout on top and drizzle with the sauce before serving.
