Healthy dinner with olives and capers for maximum flavor.
Ingredients:
  • 400g can borlotti beans, rinsed, drained
  • 200g grape tomatoes, halved
  • 1 leek, cut into matchsticks
  • 55g (1/3 cup) pitted kalamata olives, halved
  • 30.00 ml chopped fresh continental parsley
  • 20.00 ml drained baby capers
  • 2 garlic cloves, thinly sliced
  • 13.80 gm extra virgin olive oil
  • 4 (about 200g each) firm white fish fillets
  • 42.00 gm lemon juice
  • Baby rocket leaves, to serve
Instructions:
  • Preheat your oven to 200C. Cut four 50cm pieces of baking paper. In a bowl, mix together the beans, tomato, leek, olives, parsley, capers, garlic, and half of the oil. Season with pepper to taste.
  • 1. Spread the bean mixture evenly on the sheets of paper and place the fish on top. 2. Mix lemon juice and remaining oil in a bowl, then drizzle over the fish. Season with salt and pepper. 3. Fold the long sides of each sheet over the filling, tuck the short sides under to seal. 4. Arrange the packets on a baking tray. 5. Bake in the oven for 15-20 minutes or until the fish easily flakes with a fork.
  • Divide the parcels into bowls and sprinkle with baby arugula on top.
