Baked fish enhanced with tapenade and passata for an irresistible burst of flavor.
Ingredients:
  • 2 (about 350g each) white fish fillets
  • 62.50 ml black olive tapenade
  • 375.00 ml passata (tomato pasta sauce)
  • 82.50 ml fresh oregano leaves
  • 27.30 gm olive oil
  • 250.00 ml couscous
Instructions:
  • Preheat the oven to 180C. Grease a baking dish. Lay the fish in the dish. Coat the fish with tapenade. Pour passata over the fish and season with pepper. Sprinkle half of the oregano on top. Drizzle with 1 tablespoon of oil. Bake for 20-25 minutes until the fish flakes easily with a fork.
  • Place couscous in a heatproof bowl and massage in remaining oil. Pour 1 cup boiling water over the couscous, cover with plastic wrap, and let it sit until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  • - Serve the couscous on individual plates and halve each fish fillet. - Arrange the fish over the couscous and drizzle with sauce. - Sprinkle the remaining oregano on top before serving.
