Savor a refreshing fish entrée bursting with fresh vegetables.
Ingredients:
  • 125g cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 4 boneless fish fillets
  • 125.00 ml dill sprigs
  • 1/2 lemon, juiced
  • Olive oil, if desired
Instructions:
  • Preheat your oven to a moderate 180°C and prepare 4 large squares of baking paper.
  • Mix together ripe tomatoes and fresh onions in a bowl, drizzle with a touch of olive oil for extra flavor, and season with your favorite spices.
  • Evenly distribute tomato mixture onto each piece of baking paper. Place fish on top. Garnish with dill sprigs. Drizzle with juice and a touch of olive oil, if desired. Season to your liking.
  • Create a neat parcel with the fish, seam side up, on a baking tray. Tuck the ends underneath and bake for 10-15 minutes until the fish is cooked through.
  • Plate the dish alongside a fresh salad or perfectly cooked vegetables.
