Lime & mint fish parcels with sesame noodles

Succulent fish steamed to perfection in aromatic parcels.
Ingredients:
  • 4 (about 800g) fish fillets (like gemfish or ling)
  • 42.00 gm fresh lime juice
  • 40.00 ml thinly sliced green shallots
  • 1 medium carrot, peeled, coarsely grated
  • 20.00 ml finely chopped fresh mint
  • 36.80 gm otive oil
  • Salt & ground black pepper, to taste
  • 3 (85g pkts) instant noodles (discard flavour sachets)
  • 24.00 gm sesame seeds
Instructions:
  • Preheat your oven to 180C. Cut 4 pieces of non-stick baking paper, each about 40cm in length. Place a fish fillet in the center of each sheet of baking paper after removing the skin.
  • Distribute lime juice, green shallots, grated carrot, mint, and 1 tablespoon of olive oil evenly over the fish fillets. Season with salt and pepper, then seal the fish in parchment paper. Bake on a tray in a preheated oven for 10-15 minutes until the fish is tender and flakes easily when tested with a fork.
