Cheese and prosciutto chicken with sweet potato mash

Delicious stuffed chicken breasts with prosciutto and melted cheese.
Ingredients:
  • 4 (180g each) chicken breast fillets, trimmed
  • 4 slices light Swiss cheese, halved
  • 8 slices prosciutto
  • 9.20 gm olive oil
  • 200g baby spinach leaves, to serve
  • 900g orange sweet potato, peeled, chopped
  • 18.20 gm extra-virgin olive oil
  • 41.20 gm warm low-fat milk
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Make a lengthwise cut in each fillet to create a pocket, leaving about 1cm uncut at each end (make sure not to cut all the way through). Stuff each pocket with 2 cheese halves and 2 slices of prosciutto.
  • For sweet potato mash: Boil sweet potato until soft in a saucepan, then drain. Mash with oil and warm milk until smooth. Season with salt and pepper, then set aside.
  • Heat oil in a large non-stick pan over medium-high heat. Sear chicken for 1 to 2 minutes per side until golden. Transfer to a baking tray and roast for 7 to 10 minutes until cooked through. Let it rest covered for 5 minutes.
  • Present the warm chicken alongside a bed of baby spinach and a dollop of sweet potato mash.
