Jarlsberg and prosciutto chicken with roast vegies

Cozy up with a quick and comforting midweek dinner to beat the chill.
Ingredients:
  • 3 zucchini, chopped
  • 1 red capsicum
  • 1 eggplant
  • Olive oil spray
  • 4 chicken breast fillets
  • 4 slices jarlsberg cheese
  • 8 slices prosciutto
Instructions:
  • Preheat your oven to 200°C. Combine chopped zucchini, deseeded red capsicum, and chopped eggplant in a large roasting pan. Lightly coat with olive oil spray and season well. Roast for 45 minutes until beautifully caramelized.
  • Butterfly the 4 chicken breast fillets, place 4 slices of halved jarlsberg cheese into the cuts, and fold the chicken back over to enclose.
  • Wrap each chicken fillet with 2 slices of prosciutto and place them on top of the vegetables. Bake for an additional 15 minutes, then serve with the vegetables.
