Whipped sweet potato mash with fennel and orange

Sieve for smoothness, whisk for fluffiness - perfect mashed potatoes.
Ingredients:
  • 1kg orange sweet potato, peeled, chopped
  • 500g cream delight potatoes, peeled, chopped
  • 2 garlic cloves, peeled
  • 40.00 gm margarine spread
  • 128.75 gm milk
  • 1 small orange
  • 1/2 tsp fennel seeds
  • 20.00 ml fresh flat-leaf parsley leaves, roughly chopped
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a large saucepan, combine sweet potato, potato, and garlic. Cover with cold water and bring to a boil. Cook for 12 minutes until tender. Drain and return to the pan over low heat. Toss for 1 minute until excess liquid evaporates. Remove from heat and mash with a potato masher. Press mixture through a sieve into a heatproof bowl. Add spread and half of the milk. Season with salt and pepper, whisk until combined. Gradually add the remaining milk and whisk until light and fluffy.
  • Zest the orange using a zester (refer to Notes).
  • Toast fennel seeds in a frying pan over low heat until fragrant. Transfer to a bowl and add orange zest. Let it sit for 5 minutes, then mix in the parsley.
  • Top the mashed potatoes with the fragrant blend of fennel and orange, then generously drizzle with oil before serving.
