Whipped sweet potatoes, a light and fluffy sweet treat, perfect served warm or cold with a dollop of whipped cream.
Ingredients:
  • 2 sweet potatoes
  • 2 cups white sugar
  • 0.75 cup evaporated milk
  • 0.5 cup butter, melted
  • 0.25 cup dark corn syrup
  • 2 eggs, lightly beaten
  • 3 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple pie spice
  • 0.25 teaspoon salt
  • 1 (9 inch) unbaked deep dish pie crust
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and nestle your sweet potatoes in an aluminum foil-lined baking dish.
  • Bake in a hot oven until potatoes are fork-tender and the skin starts to loosen, for 30 to 45 minutes. Let the potatoes cool.
  • Peel the potatoes and mash them in a large bowl. Combine sugar, evaporated milk, butter, corn syrup, eggs, flour, vanilla extract, apple pie spice, and salt. Beat the mixture with an electric mixer until fluffy, about 5 minutes. Pour the sweet potato batter into the pie crust, reserving any excess batter for later use.
  • Bake in a hot oven until the pie is cooked through and the crust is golden brown, for about 45 to 50 minutes.
