Quick, easy, and sweet cornbread pairs perfectly with any main dish, like jambalaya.
Ingredients:
  • cooking spray
  • 3 (7.5 ounce) packages cornbread mix (such as Jiffy®)
  • 1 cup milk
  • 3 eggs
  • 1 (14.75 ounce) can creamed corn
  • 0.5 cup white sugar
  • 0.5 cup butter, melted
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously coat a 9x13-inch baking pan with cooking spray.
  • Transfer the corn bread mix into a large bowl.
  • In a separate bowl, combine milk and eggs and pour over the cornbread mix. Gently stir to incorporate all ingredients. Add creamed corn and sugar, stirring gently until well combined, being careful not to overmix.
  • Pour the batter into the baking pan and drizzle with melted butter.
  • Bake in the preheated oven for 30 to 40 minutes until the top is golden brown and a toothpick inserted into the center comes out clean. Serve hot.
