Traditional Irish potato cake with mashed potatoes, warm spices, walnuts, and sweet raisins - a family heirloom favorite.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cloves
  • 2 teaspoons ground nutmeg
  • 2 cups white sugar
  • 0.66666668653488 cup shortening
  • 2 large eggs
  • 2 cups mashed cooked potatoes
  • 0.75 cup milk
  • 1 cup chopped walnuts
  • 1 cup raisins
Instructions:
  • Preheat the oven to a toasty 325 degrees F (165 degrees C), then generously grease and flour a 10-inch Bundt pan.
  • Combine and sift together flour, baking powder, cinnamon, cloves, nutmeg, and salt in a bowl.
  • In a large bowl, use an electric mixer to blend sugar and shortening until fluffy. Gradually add eggs, mixing well after each addition. Alternate adding flour mixture with mashed potatoes and milk. Fold in walnuts and raisins. Transfer batter to the prepared pan.
  • Bake in the preheated oven for 1 1/2 to 2 hours, or until a toothpick inserted into the center comes out clean.
