Irresistible Irish potato griddle cakes - crispy and golden, made with baked and grated raw potato. Enjoy with butter or honey.
Ingredients:
  • 0.5 pound potatoes, unpeeled
  • 1.5 cups buttermilk
  • 0.5 pound potatoes, peeled and grated
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 tablespoons butter, or as needed
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C). Scrub the potatoes with their skins on and pierce them multiple times with a fork before placing them on a baking sheet.
  • Bake the potatoes in the preheated oven until fork-tender, for 50 minutes to 1 hour. Once cooled, peel them and mash with buttermilk. Stir in grated raw potato, flour, baking soda, salt, and pepper.
  • In a large skillet or griddle over medium heat, melt the butter. Spoon the potato mixture onto the skillet to form 3-inch cakes. Cook until golden and crisp, flipping once, for approximately 5 minutes per side.
