Crispy Irish potato pancake made with grated and mashed potatoes, golden on the outside and fluffy inside.
Ingredients:
  • 1.5 cups grated raw potatoes
  • 1 cup all-purpose flour
  • 1 cup leftover mashed potatoes
  • 1 large egg
  • 1 tablespoon skim milk
  • salt and pepper to taste
Instructions:
  • Combine grated potatoes and flour in a large bowl, then fold in the mashed potatoes until mixed.
  • Combine the egg and milk in a separate bowl, then fold the mixture into the potatoes. Season with salt and pepper to taste.
  • In a large skillet over medium-high heat, heat oil. Shape potato mixture into 2-inch patties and fry until golden brown on both sides, about 3 to 4 minutes each. Drain on paper towels and serve warm.
