Cheesy mashed potato tacos with green onions - a crispy, savory delight!
Ingredients:
  • 5 large potatoes, peeled and chopped
  • 0.25 cup milk
  • 1 cup chopped green onions
  • 1.5 cups shredded Cheddar cheese
  • 1 (12 ounce) package corn tortillas
  • 1 cup Ranch-style salad dressing
Instructions:
  • Place a large pot of salted water on the stove and bring it to a rolling boil. Add the potatoes and simmer for about 15 minutes until they are fork-tender.
  • After draining the potatoes, place them in a large bowl and pour in the milk. Mash until smooth, then add the onions and cheese, mixing well. Spoon 2 heaping tablespoons of the potato mixture into the center of each tortilla, fold in half, and secure with a toothpick.
  • Heat a generous amount of oil in a large skillet over medium-high heat. Fry tortillas until crispy. Enjoy with ranch dressing for dipping.
