Crispy potato tacos filled with creamy cotija cheese and potato mixture for a comforting meal.
Ingredients:
  • 4 medium potatoes, peeled and halved
  • 1 cup milk
  • 4 tablespoons salted butter
  • 0.5 teaspoon ground white pepper
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup crumbled cotija cheese
  • 12 corn tortillas
  • 0.5 cup finely chopped fresh cilantro
  • 2 tablespoons olive oil
Instructions:
  • Start by cooking the potatoes in a pot of salted water until they are soft enough to mash, which will take around 20 to 25 minutes. Drain the potatoes and return them to the pot. Then, mix in the milk, butter, and white pepper over medium heat until well combined, adding extra milk if necessary. Lastly, stir in the Parmesan and cotija cheeses until the mixture is nice and thick.
  • Wrap the tortillas in a towel or paper towels and microwave on high for about 45 seconds until softened.
  • Generously spread a flavorful 2 heaping tablespoons of the potato mixture on one side of a tortilla. Sprinkle with fresh cilantro and fold the tortilla in half to create a delightful taco shape; the mixture will bind everything together perfectly. Repeat the process to make more tasty tacos while the tortillas are still warm.
  • In a large skillet over medium heat, fry the tacos in oil until golden brown on both sides, about 5 minutes, turning occasionally. Drain on paper towels and serve hot.
