Bacon, Potato, and Egg Taco Ole

Sautéed onion, potato, and egg tacos with crispy bacon on warm tortillas or toast. Top with salsa for a zesty kick!
Ingredients:
  • 8 bacon strips
  • 8 eggs
  • 0.33333334326744 cup milk
  • 3 tablespoons water
  • salt and pepper to taste
  • 0.33333334326744 cup diced onion
  • 2 large potatoes, peeled and chopped
  • 1 tablespoon butter
  • 4 corn or flour tortilla
Instructions:
  • Cook bacon in a skillet over medium-high heat until crisped to perfection. Use a slotted spoon to transfer bacon to paper towels to drain. Crumble bacon and set aside, keeping the delicious drippings in the skillet to amp up the flavor.
  • Combine eggs, milk, water, salt, and pepper in a bowl and mix until fully incorporated.
  • Combine potatoes with the delicious bacon drippings in a hot skillet until semi-soft. Add onions and cook for 1 minute, stirring occasionally. Pour in the eggs, then mix in crumbled bacon and butter. Cook until eggs reach your preferred level of doneness.
  • Fill tortillas with the luscious egg mixture, and enjoy immediately.
