Herby potato, egg and bacon salad

Indulgent Christmas potato salad bursting with creamy richness.
Ingredients:
  • 800g kipfler potatoes, scrubbed
  • 125g shortcut bacon
  • 123.75 gm low-fat mayonnaise
  • 117.50 gm light sour cream
  • 40.00 ml white wine vinegar
  • 4 medium boiled eggs, chopped
  • 125.00 ml fresh flat-leaf parsley, chopped
  • 62.50 ml fresh chives, finely chopped
Instructions:
  • Cook the potatoes until tender, then drain and cool. Slice them thickly and transfer to a large mixing bowl.
  • In a medium non-stick frying pan over medium heat, crisp and golden the chopped bacon by stirring. Then, transfer it to a bowl together with the potatoes.
  • In a bowl, combine mayonnaise, sour cream, and vinegar until smooth. Mix in potatoes, eggs, and herbs, and gently toss to blend. Serve and enjoy!
