Deliciously crispy fried potato bites bursting with flavor - a must-try!
Ingredients:
  • 1kg desiree potatoes, unpeeled
  • 20.00 ml plain flour
  • 20.00 ml finely chopped fresh continental parsley leaves, plus extra, to sprinkle
  • 5.00 gm caster sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • Vegetable oil, to shallow-fry
  • Sea salt flakes, to sprinkle
  • Aioli, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan, add the potatoes and cover them with cold water. Bring to a boil and cook for 15-20 minutes until they are just tender. Drain and allow to cool.
  • Peel the potatoes and grate them into a large bowl. Pat them dry with a paper towel to remove excess moisture before lining a baking tray with baking paper.
  • Mix together the flour, parsley, sugar, garlic powder, onion powder, and oregano with the potato. Season well and ensure everything is combined thoroughly. Take a quarter of the mixture and place it on a clean work surface. Shape the mixture into a 21cm-long log by using your hands to press and roll it. Cut the log into 3cm pieces using a sharp knife and place them on the prepared tray. Repeat this process with the rest of the potato mixture.
  • Heat oil in a large saucepan or deep frying pan until it reaches a depth of 7cm. Fry potato gems in batches for 2-3 minutes until golden and crispy. Drain on a paper towel-lined plate and season with sea salt flakes and extra parsley. Serve with aïoli and lemon wedges.
