Garlic and herb butter smashed potatoes recipe

Elevate your roast potatoes with garlic herb butter and Parmesan for irresistible crispiness and flavor.
Ingredients:
  • 1.5kg baby potatoes, washed
  • 36.40 gm extra virgin olive oil
  • 40g (1/2 cup) finely grated parmesan
  • 100g butter, chopped, at room temperature
  • 1 lemon, rind finely grated
  • 40.00 ml chopped fresh continental parsley
  • 62.50 ml chopped fresh chives
Instructions:
  • Preheat the oven to 200C (180C fan forced) and prepare 2 large baking trays with baking paper.
  • In a large saucepan, gently submerge the potatoes in cold water and season generously with salt. Bring to a vigorous boil over high heat and cook for about 10 minutes until potatoes are just tender. Drain the potatoes and let them cool in a colander.
  • In a bowl, combine butter, garlic, lemon rind, parsley, 2 tablespoons chives, and season with salt and pepper. Mix well to incorporate all the flavors.
  • Distribute the potatoes evenly on the trays. Gently press down on each potato with the palm of your hand. Drizzle with oil and sprinkle parmesan on top. Season with your favorite seasoning. Roast for 30 minutes or until crispy and golden.
  • Finish by lavishing the potatoes with the luscious butter mixture and continue roasting until they reach a glorious golden crisp. Finally, adorn them with the remaining tablespoon of charming chives.
