Mouthwatering vegan tacos with garlic potatoes, zesty corn and bell pepper mix, and fresh cilantro.
Ingredients:
  • 2 red potatoes, diced
  • 2 tablespoons vegetable oil, divided
  • 1 teaspoon garlic powder
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 0.5 cup frozen corn
  • 1 jalapeno pepper, chopped
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 (6 inch) corn tortillas
  • 0.25 cup chopped green onions
  • 0.25 cup chopped cilantro
  • 1 lime, cut into wedges
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a bowl, coat the potatoes with 1 tablespoon of oil and garlic powder. Transfer the potatoes to a baking sheet in a single layer.
  • Roast in the oven until soft, approximately 30 minutes.
  • In a skillet over medium-low heat, sizzle the red bell pepper, onion, corn, jalapeno, salt, and black pepper in the remaining oil until the veggies are slightly soft, for about 10 minutes.
  • Preheat a griddle over medium heat. Warm tortillas on the griddle, flipping once, for 2 to 3 minutes. Place tortillas on serving plates, stuff with baked potatoes and sauteed corn. Garnish tacos with green onions, cilantro, and serve with lime wedges.
