Chilli and garlic potato mash

Spicy mashed potato with intense flavor twist.
Ingredients:
  • 1kg potatoes (see note), peeled, diced
  • 50ml olive oil
  • 1 long red chilli, halved, deseeded, finely chopped
  • 1 birdseye chilli, deseeded, finely chopped
  • 150ml milk, warmed
  • 44.00 gm sweet chilli sauce
Instructions:
  • Boil potatoes in a pot of salted water over medium-high heat for about 10 minutes or until easily pierced with a fork. Drain in a colander.
  • Heat oil in a frying pan over medium heat, then add chillies and cook for 1 minute until aromatic. Stir in garlic and cook for an additional 15 seconds before removing from heat.
  • Place the potatoes back in the warm saucepan and gently shake over low heat for about 30 seconds until any excess moisture disappears. Remove from heat.
  • Roughly mash potatoes using a potato masher, then add warm milk. Beat with a wooden spoon until light and fluffy. Stir in chilli mixture, season with salt and pepper, and drizzle with sweet chilli sauce before serving.
