Elevate Sunday roast with spicy chili and aromatic garlic.
Ingredients:
  • 1 1/2 tsp dried chilli flakes
  • 4 (1.2kg total) chicken marylands
  • 2 bulbs garlic, cloves separated
  • 2 small lemons
  • 800g desiree potatoes, peeled, halved
  • 128.75 gm milk, warmed
  • 40g butter, chopped
  • Steamed broccolini, to serve
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced. Sprinkle chili over chicken and season with salt and pepper. Place the chicken in a large roasting pan and arrange garlic around it. Quarter 1 lemon and squeeze over the chicken. Drizzle the chicken with oil. Roast for 30 minutes, then remove from the oven. Transfer half the garlic cloves to a board and juice the remaining lemon over the chicken. Roast for an additional 10 minutes or until cooked through.
  • Allow the garlic to cool slightly. Squeeze the garlic to remove the skins, then finely chop it.
  • In a saucepan, cook potatoes in cold water until tender, about 15 minutes. Drain, then return to pan over low heat to remove excess liquid. Mash potatoes until smooth, then mix in milk, butter, and roasted garlic pulp. Season to taste.
  • Plate the roasted garlic and lemon chicken alongside flavorful garlic mash and vibrant steamed broccolini.
