Roasted caulini with chimichurri recipe

Delicious homemade chimichurri sauce pairs perfectly with roasted cauliflower, chicken, or steak.
Ingredients:
  • 1 bunch Caulini baby cauliflower
  • 80ml olive oil
  • 1 shallot, finely chopped
  • 1 long red chilli, seeded, finely chopped (optional)
  • 40.00 ml finely chopped coriander
  • 20.00 ml finely chopped flat-leaf parsley
  • 40.00 ml red wine vinegar
Instructions:
  • Preheat your oven to 180°C and grease a large baking tray. Spread out the Caulini in a single layer on the tray, drizzle with 1 tbs of oil, and bake for 10 mins until golden and tender.
  • In a medium bowl, mix together the shallot, garlic, chili (if using), coriander, parsley, and vinegar. Gradually whisk in the rest of the oil until the mixture is well combined. Don't forget to season to taste.
  • Place the Caulini elegantly on a platter and generously drizzle with the flavorful chimichurri sauce.
