Transform pumpkin seeds into a tasty Halloween treat with our easy trick.
Ingredients:
  • One medium sized pumpkin
  • Salt
  • Extra virgin olive oil
Instructions:
  • Remove the pumpkin seeds: Cut off the top of the pumpkin by creating a circle around the stem with a sharp knife, angling the blade inwards. Use a sturdy metal spoon to scoop out the seeds and strings from the inside. Rinse the pumpkin seeds in a colander under running water to separate them from any remaining debris.
  • In a medium saucepan, combine the measured pumpkin seeds with 2 cups of water and 1 tablespoon of salt for every 1/2 cup of seeds. Bring to a boil and simmer for 10 minutes. Drain the seeds before using. Add more salt for extra flavor if desired.
  • Preheat the oven to 400°F. Coat a roasting pan with about a teaspoon of olive oil. Spread the seeds in a single layer and toss to coat. Bake on the top rack for 5 to 20 minutes until they brown, depending on size. Watch closely to avoid over-toasting. Remove from the oven and cool on a rack before enjoying either whole or cracked.
