Blend roasted pumpkin seeds, onions, serrano peppers, garlic, cilantro, and apple juice for a flavorful spread.
Ingredients:
  • 0.5 cup vegetable oil
  • 8 peeled garlic cloves, halved or quartered depending on size
  • 2 cups green (hulled) pumpkin seeds
  • 0.5 cup diced onion
  • 2 tablespoons diced green serrano or jalapeno chilies
  • 0.75 cup apple juice
  • 1 cup fresh cilantro leaves
  • 1 teaspoon salt, plus more to taste
  • 0.5 cup apple juice or water, to adjust texture of spread
  • 2 teaspoons apple cider vinegar
Instructions:
  • In a cold, dry skillet, gently place garlic pieces with vegetable oil. Cook on low heat for 8-10 minutes until garlic starts to soften without browning, stirring occasionally. Once garlic is tender, remove skillet from heat and allow garlic to cool in the infused oil.
  • In a cold, dry skillet, add pumpkin seeds. Heat over medium heat, stirring occasionally until seeds are hot and fragrant but not browned, for about 3 to 5 minutes. Remove skillet from heat and transfer seeds to a bowl.
  • In a skillet over high heat, sizzle onion and Serrano pepper until beautifully caramelized, then add apple juice. Simmer down to a luscious syrupy finish over medium heat. Off the heat, and delectable sauce is ready.
  • Combine pumpkin seeds, cilantro leaves, onion mixture, softened garlic and oil, lime juice, and salt in a food processor. Pulse until a coarse paste forms, scraping down the sides occasionally, about 1 or 2 minutes. If the mixture is too thick, add a few tablespoons of apple juice or water for desired consistency (apple juice will add sweetness).
  • Process mixture to your liking, then transfer to a bowl. Cover and refrigerate for roughly 2 hours until chilled. Taste and tweak seasonings and acidity with more salt and/or apple cider vinegar as required.
