Pumpkin seed and flax granola breakfast cookies with raisins and walnuts, ideal for a quick and satisfying start to your day or a delicious snack later on.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup butter
  • 1 cup pumpkin seed and flax granola
  • 1 cup raisins
  • 0.5 cup finely chopped walnuts
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and cover a baking sheet with parchment paper.
  • Combine flour, baking powder, and baking soda in a bowl and set it aside.
  • In a large bowl, blend sugar and butter until smooth. Mix in eggs until creamy. Add granola, raisins, and walnuts; mix until slightly grainy. Stir in flour until dough forms. Spoon teaspoonfuls of dough onto baking sheet, 2 inches apart.
  • Bake the cookies in the preheated oven for about 10 minutes until lightly browned on top. Let them cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
