Enjoy the best of both worlds with this delicious breakfast cookie that combines the flavors of a cookie and the healthiness of a granola bar.
Ingredients:
  • 1 cup Gold Medal™ white whole wheat flour
  • 1 cup old-fashioned oats
  • 3/4 teaspoon baking soda
  • 1/4 cup ground flaxseed or flaxseed meal
  • 1/4 cup chia seed
  • 1/4 cup roasted salted hulled pumpkin seeds (pepitas)
  • 1/4 cup roasted salted sunflower nuts
  • 1 cup dried cranberries
  • 1/2 cup almonds, chopped
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/2 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1 egg
Instructions:
  • Preheat oven to 350°F.
  • Combine flour, oats, baking soda, flaxseed, chia seeds, pepitas, sunflower seeds, dried cranberries, and almonds in a medium bowl; set aside.
  • Combine honey, butter, brown sugar, and vanilla in a large bowl. Use an electric mixer on medium speed to achieve a creamy consistency. Add the egg and mix until well blended. Stir in the flour mixture until fully incorporated. Place heaping 2 tablespoonfuls of dough 2 inches apart on ungreased cookie sheets.
  • Bake for 10-13 minutes until beautifully golden. Let cool for 5 minutes before transferring to a cooling rack.
