Kid-friendly banana oat cookies, perfect for lunch boxes. Freeze extra for convenience.
Ingredients:
  • 195.00 gm mashed banana
  • 65g dried cranberry
  • 45g rolled oats
  • 40g shredded coconut
  • 2.50 gm mixed spice
  • 60ml maple syrup
  • 60ml olive oil
  • 40.00 ml pepitas (pumpkin seed kernels)
Instructions:
  • Preheat your oven to 140°C then prepare 2 baking trays by lining them with baking paper.
  • Combine the banana, cranberries, oats, coconut, mixed spice, maple syrup, and oil in a medium bowl, mixing until well blended.
  • Spoon mixture onto trays in 2-tablespoon portions, flatten gently with damp hands, sprinkle with pepitas, and bake for 30-35 minutes until light golden and firm to the touch. Let cool on trays before storing in an airtight container in the fridge for up to 5 days.
