Banana and oat blender pancakes recipe

Whip up a crowd-pleasing breakfast with these delectable banana oat blender pancakes.
Ingredients:
  • 180g rolled oats
  • 3 ripe bananas, chopped
  • 3 Free Range Eggs
  • 250ml milk
  • 4.40 gm vanilla extract
  • 2.00 gm baking powder
  • 190g yoghurt
  • 250g strawberries, thinly sliced
  • 54.00 gm maple syrup
  • 20.00 ml Pistachios, chopped
Instructions:
  • In a blender, combine oats, banana, eggs, milk, vanilla, and baking powder. Blend until smooth. Allow the mixture to rest for 10 minutes.
  • Spritz a large non-stick frying pan with olive oil spray over medium-low heat. Pour ¼ cup (60ml) batter into the pan four times. Cook until bubbles form on the pancakes, then flip and cook until done. Keep warm under foil and repeat with the rest of the batter to make 16 pancakes.
  • Serve the pancakes on plates, layer with yogurt and strawberries, drizzle with maple syrup, and sprinkle with pistachios.
