Delicious homemade carrot cake with cream cheese frosting.
Ingredients:
  • 185ml milk
  • 165g brown sugar
  • 2 eggs
  • 3 bananas, ripe, mashed
  • 50.00 gm rolled oats
  • 300g self-raising flour
  • 40.00 ml chia seeds
  • Cooking spray, for greasing
  • 5.00 gm cinnamon
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare a 20cm x 10cm loaf tin by greasing and lining it.
  • Combine milk, sugar, and eggs in a bowl, whisk until smooth. Gently mix in bananas, oats, flour, cinnamon, and chia seeds.
  • Transfer the mixture into the pan and bake for 1 hour, or until a skewer inserted in the center comes out clean. Enjoy warm, cooled, or toasted with butter.
