Indulge in guilt-free snacking with these delicious banana oat muffins baked to perfection in the oven.
Ingredients:
  • 260g self-raising flour
  • 2.50 gm ground cinnamon
  • 1.25 gm bicarbonate of soda
  • 100g rolled oats
  • 100g brown sugar
  • 2 eggs
  • 185g yoghurt
  • 60ml canola oil
  • 250g banana
Instructions:
  • Preheat your oven to 200°C while you prepare a 12-cup muffin pan by lining it with paper cases.
  • Sift flour, cinnamon, and soda into a bowl. Add the flour husks, oats, and brown sugar, then mix everything together.
  • Combine eggs, yoghurt, and oil in a bowl and whisk until smooth. Mix in banana. Pour this mixture into the dry ingredients and gently stir with a wooden spoon until just combined. It's okay if the mixture is slightly lumpy - no need to mix it perfectly.
  • Transfer the mixture into paper cases and bake for 20 minutes or until golden and fully cooked. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
