Wholesome oatmeal banana muffins - a perfect, sweet and healthy breakfast made with ripe bananas and rolled oats, perfect for a quick and delicious snack on the run.
Ingredients:
  • 1.5 cups unbleached all-purpose flour
  • 1 cup rolled oats
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.75 cup milk
  • 0.33333334326744 cup vegetable oil
  • 1 cup mashed bananas
Instructions:
  • Preheat the oven to 400 degrees F (205 degrees C), then prepare a 12-cup muffin tin by lining it with paper liners.
  • In a medium bowl, mix together flour, oats, sugar, baking powder, baking soda, and salt; set aside.
  • In a large bowl, gently beat the egg. Whisk in milk, oil, and vanilla. Fold in mashed bananas. Add the flour mixture and mix until just combined. Fill the muffin cups 3/4 full with the batter.
  • Bake in the oven preheated until tops spring back when lightly pressed, for 18 to 20 minutes.
