Healthy banana-oat muffins made with flaxseed, Greek yogurt, applesauce, walnuts, and coconut oil.
Ingredients:
  • cooking spray
  • 3 tablespoons water
  • 1 tablespoon flaxseed meal
  • 1 cup whole wheat flour
  • 1 cup finely ground steel-cut oats
  • 0.5 cup brown sugar
  • 0.5 teaspoon salt
  • 3 ripe bananas, mashed
  • 0.25 cup honey
  • 0.25 cup nonfat plain Greek yogurt
  • 1 egg, lightly whisked
  • 3 tablespoons applesauce
  • 3 tablespoons coconut oil
  • 1.5 teaspoons vanilla extract
  • 0.5 cup chocolate chips
  • 0.5 cup ground walnuts
  • 1 tablespoon cinnamon sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and position a rack in the lower third. Grease a mini muffin pan with cooking spray.
  • In a bowl, mix water and flaxseed meal and allow it to sit for 5 minutes.
  • Combine flour, oats, brown sugar, and salt in a bowl and whisk together before setting aside.
  • Combine the thickened flaxseed mixture with bananas, honey, yogurt, egg, applesauce, coconut oil, and vanilla extract in a mixing bowl. Gently incorporate the flour mixture into the banana mixture. Finally, gently add in the chocolate chips and walnuts.
  • Scoop batter into the muffin tin using an ice cream scooper, then generously sprinkle cinnamon sugar on top.
  • Bake in the preheated oven for around 18 minutes, or until a toothpick inserted in the center of a muffin comes out clean without overbaking.
  • Allow muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Optionally, freeze for later enjoyment.
