Delicious banana chocolate chip oatmeal muffins with a wholesome twist of rolled oats and whole wheat flour.
Ingredients:
  • 1.5 cups whole wheat flour
  • 1 cup rolled oats
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 cup semi-sweet chocolate chips
  • 0.5 cup unsweetened applesauce
  • 0.25 cup skim milk
  • 1 cup mashed banana
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • Combine whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips in a bowl, creating a well in the center.
  • In a separate bowl, whisk eggs until frothy. Mix in applesauce, skim milk, and banana. Pour the wet ingredients into the flour mixture and stir until just combined. The batter will be lumpy. Fill muffin cups 3/4 full.
  • Bake until a toothpick inserted in the center of multiple muffins comes out clean, for 16 to 18 minutes. Let them cool in the pan for 5 minutes before transferring to wire racks to finish cooling.
