Banana Spelt Muffins

Indulgent banana-chocolate chip muffins packed with nourishing spelt, almond milk, coconut oil, and agave nectar. Rich in healthy fats and fiber.
Ingredients:
  • 0.5 cup almond milk
  • 0.5 cup coconut oil, melted
  • 3 small bananas, mashed
  • 2 eggs, lightly beaten
  • 0.33333334326744 cup agave nectar
  • 2 cups spelt flour
  • 1 cup semi-sweet chocolate chips
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 1 (.25 ounce) package unflavored gelatin
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a 12-cup muffin tin by lining it with paper liners or greasing with coconut oil.
  • Combine almond milk, coconut oil, ripe bananas, eggs, agave nectar, and vanilla extract in a medium mixing bowl, mixing until smooth.
  • In a large mixing bowl, blend together flour, chocolate chips, baking powder, baking soda, cinnamon, salt, nutmeg, and gelatin. Make a well in the center and pour in the banana mixture. Gently stir until just combined with a few lumps remaining. Spoon the batter into the muffin cups.
  • Bake until lightly golden and a toothpick inserted in the center comes out clean, for 16-18 minutes. Let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
