Vegan muffins with dates, sweet potato, spelt, oats, and bananas - a delightful and nutritious treat!
Ingredients:
  • 0.5 sweet potato, peeled and diced
  • 1.5 cups spelt flour
  • 1 cup rolled oats
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 2 very ripe bananas, mashed
  • 0.5 cup sunflower seed oil
  • 0.5 cup white sugar
  • 0.33333334326744 cup chopped pitted dates
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper muffin liners.
  • In a small pan, simmer diced sweet potato in enough water to cover until tender, about 10 minutes. Drain and let cool.
  • In a bowl, combine spelt flour, oats, baking soda, and cinnamon. In a separate bowl, mix bananas, oil, and sugar.
  • Combine the banana mixture with the spelt mixture until just moistened. Gently fold in the dates and sweet potato. Distribute the batter evenly into 12 muffin cups.
  • Bake in the preheated oven for about 18 minutes or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
