Portable Almond Butter Date Balls made with dates, maple syrup, almond butter, and nuts. Easy to make in the food processor. Irresistible snack on the go!
Ingredients:
  • For the balls:
  • 1/2 cup walnuts
  • 1/2 cup pitted dates (about 4 to 5), cut into quarters
  • 1/2 cup cocoa powder, any kind (I usually use Hershey’s Special Dark )
  • Scant 1/2 cup maple syrup
  • 1/2 cup almond butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/2 cup whole almonds
  • Cooking spray (optional)
  • For the topping:
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup cocoa powder
Instructions:
  • Prepare the date balls: Combine walnuts and dates in a food processor, pulsing until they form a rough crumble. Add cocoa powder, maple syrup, almond butter, vanilla extract, and sea salt. Pulse until thick and smooth, and the mixture starts pulling away from the bowl's edge. Be watchful, as these sticky ingredients can cause the food processor to get stuck. Tar, as it comes together swiftly.
  • Incorporate almonds: Add the almonds and pulse briefly for a mix of textures, leaving some pieces crunchy.
  • Prepare the date balls: Line a baking sheet with parchment paper. Put coconut in one bowl and cocoa powder in another. Using a cookie scoop sprayed with cooking spray, scoop out the mixture, roll into golf-ball shapes, and coat with coconut, cocoa powder, or leave plain.
  • Chill and store the date balls: Place the date balls on a baking sheet and refrigerate for a few hours or overnight. Once firm, transfer to a sealed plastic container and store in the fridge for up to several weeks, although they are usually gone before that.
