Elevate your banana bread game with nutritious spelt flour and a mix of mashed and diced bananas for a delightful texture twist.
Ingredients:
  • 2 cups spelt flour
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 2 large eggs
  • 0.5 cup sour cream
  • 0.5 cup unsweetened applesauce
  • 0.5 cup pure maple syrup
  • 1.25 teaspoons vanilla extract
  • 4 ripe bananas
  • 1 cup chopped pecans
  • 2 tablespoons finely chopped pecans, or more to taste
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C), then generously coat an 8 1/2x4 1/2-inch loaf pan with cooking spray.
  • In a medium bowl, mix together the spelt flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  • Whisk eggs in a large bowl until pale yellow. Mix in sour cream, applesauce, maple syrup, and vanilla extract. Mash 2 bananas into the mixture, then dice the remaining bananas and add them in. Add 1 cup pecans and fold in flour until just combined; avoid overmixing.
  • Transfer the batter into the loaf pan and generously sprinkle 2 tablespoons of pecans on top.
  • Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the pan cool on a rack for about 10 minutes, then carefully transfer the loaf onto the rack to cool completely.
